Halloumi is produced from goat or sheep’s milk or goat / sheep milk mixture, with or without cow’s milk. The specific characteristics include its unique folding shape and the fresh mint leaves which are added in the process. Halloumi contains 43% fat, 22%protein, 45% moisture and 2% salt.
